A family story
We officially started making our very best salamis in 1979. But the story began long before that. Traditional methods and recipes have been passed down through generations of Italian families and makers. It’s fitting that the Princi family began making these regional Italian smallgoods in a small country town of Western Australia called Bunbury, close to some of the best meat and produce available. First enjoyed by the local Italian community, our salamis, hams, cured meats and sausages are now loved by all Australians. That’s because we continue to be driven by the same values – a love of family, community and bring everyone together over a plate of good food.

So it needs to be special. At Princi, we use only the very best ingredients. 100% ethically treated Australian meat, with imported authentic Italian spices. And perhaps the most important ingredient of all – time.

To get the taste right, you need to make it the right way. That’s the old way. Our authentic Italian recipes, using traditional methods, have been passed through generations. Each salami is made and tied by hand, then fermented naturally and hung for weeks to cure and mature. You can taste it in the sweeter flavours and see it in the richer colour.
It takes a little longer because we care a lot more. Each slice is important, so we never cut corners with chemicals, fillers or cooking to speed things along. We don’t add any artificial preservatives or nitrates. Ours are all natural.
You may not know how we do it better, but you can taste it in every single one of our authentic range of salamis, hams and cured meats – all made to create good times with family and friends.
