Cacciatore means “hunter”. Italian hunters would take them on hunts as it provided an excellent source of protein, with a delicious firm texture and tangy, slightly spicy flavour.

Originating from the southern region of Calabria (the toe of Italy’s boot), this dry-cured sausage is made in the traditional style. It has a firm texture, deep, complex flavours, and distinctive spiciness. 

“Casalingo” means “homemade” in Italian. This type of salami was traditionally made by Italian families using simple, natural ingredients and traditional techniques, giving it a rustic flavour and texture.

This Spanish dry-cured sausage is made from ground pork and is seasoned with smoked paprika, garlic, salt, and other spices, which give
it its characteristic smoky, spicy flavour.

Originally from the town of Felino in Italy’s Emilia-Romagna region. Coarsely ground pork is seasoned with salt, black pepper, and spices, such as garlic and nutmeg, and has a tangy, savoury flavour and firm, slightly chewy texture.

As its name suggests, this salami is from Hungary and uses coarsely ground pork seasoned with a mixture of spices. In contrast to Italian salamis, it has a milder flavour, which kids love.

Nduja is a rich and spicy spreadable sausage from Calabria. We make it with spicy Calabrian chilli peppers and other seasonings, including
fennel seeds. It’s often enjoyed as a spread or condiment and is a popular pizza topping.

From the island of Sicily, this salami is seasoned with a blend of spices, including fennel seeds, black pepper, and red pepper flakes, and is
known for its bold, spicy flavour and firm, slightly chewy texture.

Sopressatte is a traditional southern Italian salami, that we season with salt, peppercorns, chilli, and rosemary. After hand-tying it in its
casings, it’s flattened to dry, giving it a distinctive rectangular shape.

This premium salami uses the finest Australian pork and authentic Italian spices. We then infuse it with flavours of the prized black truffles
from Manjimup, in the Great Southern region of Western Australia.
