| Method The Felino Salami borrows its name from the town of its origin. Located in the luscious Bazanga Valley, Felino sits 607 feet above sea level with a windy climate. These conditions make the town ideal for naturally curing meats, needing less salt to preserve the meats due to the unique microclimate. Inspired by its origins, we grind our pork at 5mm and season with salt, white pepper, black pepper and rustic flavour. It is also characterised by its smaller 65mm diameter. | ||
| Flavours A soft salami with a sweet taste and delicate aroma. The small speckles of creamy fat are complemented nicely by the light peppery flavour, leaving you with a satisfyingly balanced bite. | ||
| Perfect for Our Felino is often enjoyed slightly warm to help you experience the full depth of flavour. Pair with a nice Parmigiano Reggiano and bread as a starter, and remember to cut it the traditional way; diagonally at 60o to showcase the grains of fat! | ||
