| Method We regard Calabrese as the hotter cousin of the Casalingo, made using a very similar method with coarsely ground Australian Pork, pepper and garlic but with an added kick of chilli. It has a relatively firm texture, holding its shape well. | ||
| Flavours The Calabrese is known for its signature spice, however it also has a complex piquant flavour with a tangy sharpness from the rustic flavour, garlic and coarsely ground pepper. | ||
| Perfect for Great in a continental roll or on a pizza. Pairs well with a buttery or nutty cheese, like an aged Pecorino. Also complements medium golden ales and tangy fruit-forward wines. | ||
